4 6-ounce whitefish fillets
1 cup dry quinoa, roasted and cooked
1 cup toasted cashews, roughly chopped
1/4 cup breadcrumbs
2 tbsp. fresh basil pesto
3 tbsp. sour cream
- Preheat oven to 425℉
- In a medium bowl, combine quinoa, cashews, breadcrumbs, pesto and sour cream, mixing well to create a paste.
- Spread the paste evenly over each fish fillet and place in the oven for 10 minutes.
