Ingredients

  • 4 6-ounce whitefish fillets

  • 1 cup dry quinoa, roasted and cooked

  • 1 cup toasted cashews, roughly chopped

  • 1/4 cup breadcrumbs

  • 2 tbsp. fresh basil pesto

  • 3 tbsp. sour cream

Directions

  • Preheat oven to 425℉
  • In a medium bowl, combine quinoa, cashews, breadcrumbs, pesto and sour cream, mixing well to create a paste.
  • Spread the paste evenly over each fish fillet and place in the oven for 10 minutes.
  • Serve immediately
