Bacon & Cheddar Cups

These breakfast cups were inspired by savory crepe recipes. I love that I can create a similar flavor in such an easy and portable way!

Try getting creative with the addition of veggies to the cups, we just toss in whatever we have in the fridge and it always turns out so delicious.

These cups combine the some tasty breakfast classics. They’re insanely easy to make and perfect for a busy morning on-the-go.

Ingredients

  • 4 Whole Grain Wraps, Sprayed with Non-Stick Spray
    and Cut in Half

  • 1 Cup Cheddar Cheese, Shredded

  • 7 oz. Spinach (Frozen, Chopped, thawed and Squeezed Dry)

  • 3 oz. Mushrooms (Chopped, Stems and Pieces, Drained)

  • 1/2 Cup Olive Oil Mayonnaise

  • 4 Strips of Turkey Bacon (Cooked and Crumbled)

  • Salt & Pepper, to Taste

Directions

  • 1. Place wraps in muffin wells.
  •  In a bowl, combine all other ingredients, stirring until
    appearance is uniform
  • Place filling in each wrap cup until nearly filled.
  • Bake uncovered for 30 minutes or until eggs are
    completely set. Serve warm.
