Cajun Roasted Vegetable Whitefish
This super easy meal is perfect for those reluctant to eat fish!
Cajun Roasted Vegetable Whitefish

4 6-ounce cod fillets
1 handful arugula
1 zucchini, seeded and sliced
1 red pepper, sliced
1/2 cup water chestnuts
1/2 fennel, chopped
1/4 tsp. adobo
1/2 tsp. Cajun seasoning
1 cup snap peas
3 tbsp. soy sauce
Directions
- Preheat oven to 425℉
- In a large bowl, add vegetables, soy sauce, cajun, and adobo seasonings.
- In individual baking dishes (or one large baking fish) dust with olive oil spray. Place cod in the bottom and add 1/4 of vegetable mixture on top of each piece of fish. Place in the oven.
- Bake 10-15 minutes and serve!
