Cajun Roasted Vegetable Whitefish

Ingredients

  • 4 6-ounce cod fillets

  • 1 handful arugula

  • 1 zucchini, seeded and sliced

  • 1 red pepper, sliced

  • 1/2 cup water chestnuts

  • 1/2 fennel, chopped

  • 1/4 tsp. adobo

  • 1/2 tsp. Cajun seasoning

  • 1 cup snap peas

  • 3 tbsp. soy sauce

Directions

  • Preheat oven to 425℉
  • In a large bowl, add vegetables, soy sauce, cajun, and adobo seasonings.
  • In individual baking dishes (or one large baking fish) dust with olive oil spray. Place cod in the bottom and add 1/4 of vegetable mixture on top of each piece of fish. Place in the oven.
  • Bake 10-15 minutes and serve!
