California Club Quesadillas

Nothing says summer like this combination of west coast flavors!

California Club Quesadillas

Prep time




  • 2 100% whole grain wrap, rectangles

  • 1 avocado, sliced

  • 2 cups shredded chicken

  • 1 tbsp. Tobasco sauce

  • 2 heaping tbsp. sour cream

  • 1/2 cup red onion, diced

  • 1/2 cup sun-dried tomato

  • 1 cup Monterey jack & cheddar blend cheese, shredded


  • In a large bowl, combine chicken, Tobasco, sour cream, onion, tomato and cheese until mixed.
  • Add half of mixture to each wrap, add half of sliced avocado to the top of each and fold in half lengthwise, pressing down lightly to seal.
  • Set in a Panini grill for 2-3 minutes or until crispy. Alternatively, coat a sauté pan with olive oil spray and press with a plate, 2 minutes on each side.
  • Cut each quesadilla in half and serve!
