Serve half as chili one night, then cook the other half down to be a stew for another night!

Ingredients

  • 1 Cup Celery, Chopped

  • 1 Cup Onion, Chopped

  • 3 Cups Beef Stock

  • 1 Cup Tomatoes, Chopped

  • 1-2 Cups Chicken Breast, Chopped

  • 2 Cups White Beans

  • 1-2 Tablespoons Oregano

  • Red Pepper, to Taste

  • Black Pepper, to Taste

Directions

  • Heat pot with macadamia nut oil and cook celery and onion for a 3-4 minutes.
  • Add remaining ingredients and allow to simmer for about an hour, checking regularly.
  • Serve.
