Ingredients

  • 1 cup dry quinoa, rinsed and cooked

  • 1 red pepper, sliced thinly

  • 1 zucchini, sliced thinly

  • 1 onion, sliced

  • 4 tbsp. sesame oil

  • 4 tbsp. low-sodium soy sauce

  • 4 chicken breasts, grilled and roughly chopped

  • 1 tsp. sriracha

Directions

  • Combine 2 tbsp. sesame oil and 2 tbsp. soy sauce and coat chicken; grill until cooked through.
  • In a large bowl, combine all ingredients, stirring to coat evenly in sauce. Mix in grilled chicken and serve!
