1 cup dry quinoa, rinsed and cooked
1 red pepper, sliced thinly
1 zucchini, sliced thinly
1 onion, sliced
4 tbsp. sesame oil
4 tbsp. low-sodium soy sauce
4 chicken breasts, grilled and roughly chopped
1 tsp. sriracha
Directions
- Combine 2 tbsp. sesame oil and 2 tbsp. soy sauce and coat chicken; grill until cooked through.
- In a large bowl, combine all ingredients, stirring to coat evenly in sauce. Mix in grilled chicken and serve!
