Fried Egg, Pepper and Provolone Sandwich

Ingredients

  • 1 Tablespoon Macadamia Nut Oil

  • 4 Large Eggs

  • 2 Bell Peppers, Sliced and Roasted or Grilled

  • 2 Slices of Provolone Cheese

  • 4 Tablespoon Mayo

  • 1/4 Teaspoon Salt

  • 1 Teaspoon Dried Basil

  • 1/2 Teaspoon Black Pepper

  • 8 Whole Grain Sandwich Rounds

Directions

  • In a small bowl, mix mayo, sea salt, dried basil, black pepper and stir until fully combined.
  • In a large skillet, heat oil and crack eggs in pan and cook until desired doneness. Place cheese on top of eggs to melt slightly in pan.
  • After cheese has melted, place each egg on a toasted slice of bread.
  • Season eggs with salt and pepper. Spread mayonnaise mixture over remaining slices of bread and cover eggs with red pepper and top slice of bread to make 4 sandwiches. Serve warm.
