Fried Egg, Pepper and Provolone Sandwich

1 Tablespoon Macadamia Nut Oil
4 Large Eggs
2 Bell Peppers, Sliced and Roasted or Grilled
2 Slices of Provolone Cheese
4 Tablespoon Mayo
1/4 Teaspoon Salt
1 Teaspoon Dried Basil
1/2 Teaspoon Black Pepper
8 Whole Grain Sandwich Rounds
Directions
- In a small bowl, mix mayo, sea salt, dried basil, black pepper and stir until fully combined.
- In a large skillet, heat oil and crack eggs in pan and cook until desired doneness. Place cheese on top of eggs to melt slightly in pan.
- After cheese has melted, place each egg on a toasted slice of bread.
- Season eggs with salt and pepper. Spread mayonnaise mixture over remaining slices of bread and cover eggs with red pepper and top slice of bread to make 4 sandwiches. Serve warm.
