Grilled Salmon with Cold Lemon-Dill Sauce

Ingredients

  • 4 salmon steaks

  • Cajun seasoning

  • 6 cloves garlic, minced

  • 2 tbsp. fresh parsley

  • 2 tbsp. fresh lemon juice

  • 1 tbsp. macadamia nut oil

  • 1 cup + 1 tbsp. water

  • 1 tbsp. arrowroot

  • 1/2 cup fresh dill

Directions

  • Dust salmon with olive oil spray and rub with a small amount of Cajun seasoning. Place on the grill over medium-high heat, about 5 minutes on each side.
  • While salmon is on the grill, heat oil in a large sauté pan over medium-high heat; add garlic and parsley; sauté 1 minute. Add lemon juice, water and dill; simmer 1 minute.
  • Add arrowroot to 1 tbsp. water and whisk with a fork until completely dissolved. Add a little bit at a time until sauce is desired thickness.
  • Remove salmon from the grill and add sauce immediately, divide it evenly over the 4 steaks and serve!
