1 Cup Onion, Chopped
1 Cup Celery, Chopped
1-1 1/2 Cup Zucchini, Chopped
2 Cloves Garlic, Minced
1/4 Teaspoon Crushed Red Pepper Flakes
2 Tablespoons Macadamia Nut Oil
1 Can Chicken Broth
1 Cup Tomatoes, Chopped
1 1/2 Cup White Beans
1 lb. Ground Beef Meatballs, Cooked
- In heated pot, sauté onion, garlic, celery and zucchini in macadamia nut oil. Add garlic and cook for 3-4 minutes.
- Add chicken broth and tomatoes; Allow to simmer about 15 minutes.
- Add beans and meatballs, heat for a few minutes more and serve.
