Meatball & Zucchini Minestrone

Ingredients

  • 1 Cup Onion, Chopped

  • 1 Cup Celery, Chopped

  • 1-1 1/2 Cup Zucchini, Chopped

  • 2 Cloves Garlic, Minced

  • 1/4 Teaspoon Crushed Red Pepper Flakes

  • 2 Tablespoons Macadamia Nut Oil

  • 1 Can Chicken Broth

  • 1 Cup Tomatoes, Chopped

  • 1 1/2 Cup White Beans

  • 1 lb. Ground Beef Meatballs, Cooked

Directions

  • In heated pot, sauté onion, garlic, celery and zucchini in macadamia nut oil. Add garlic and cook for 3-4 minutes.
  • Add chicken broth and tomatoes; Allow to simmer about 15 minutes.
  • Add beans and meatballs, heat for a few minutes more and serve.
