Mediterranean Pasta Salad with RadishCourse: LunchDifficulty: Easy
4 Cups Cooked Pasta
1/2 Cup Radishes, Sliced
1 Teaspoon Oregano
1/4 Cup Olive Oil
3 Tablespoon Lemon Juice
1/4 Onion, Finely Chopped
1/2 Sun Dried Tomatoes, Chopped
1/2 Cup Feta Cheese
2 Cups Cooked Chicken, Cubed
Salt & Pepper, to Taste
- If the pasta hasn’t been cooked yet, cook rotini uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain and cool by running cold water over the pasta in a colander set in the sink.
- In a mixing bowl combine olive oil, lemon juice, oregano, salt and pepper. Whisk together.
- Add chicken to coat in dressing. Slice radishes and add to the mixing bowl. Then add feta, onions and sun-dried tomatoes. Fold all the ingredients together and let sit for at least 15-20 minutes in the fridge (one hour maximum).
- To serve, spoon one cup of cook pasta on a dish, and top with the chicken-vegetable mixture. Combine and serve
