Pork with Apples & Kraut

Fruit increases your blood sugar the same way a candy bar would. Small amounts of apple like in this recipe won’t effect you much, but watch portion sizes if you’re trying to keep your blood sugar stable!

Ingredients

  • 1 Tablespoon Macadamia Nut Oil

  • 1 lb. Pork Loin, Fat Trimmed & Cubed

  • 16 oz. Sauerkraut with Juice

  • 1 Apple, Peeled, Cored & Chopped

  • 1 Teaspoon Caraway Seed

Directions

  • Heat oil in a large skillet over medium heat. Add pork and brown.
  • Add sauerkraut (to taste), caraway seeds, and apple. Sauté.
  • Finish off in a 350-degree oven or cook thoroughly on the stove. (If placing in the oven, make sure your pan is oven-safe!) Let the liquid simmer down and cook the pork until tender. Serve and enjoy!
