If you don’t have a panini press, I would invest in one! They are super versatile and come in handy to kick lunches up a notch!

Red Onion, Turkey and Swiss Panini

Ingredients

  • Hummus, to Taste

  • 8 Whole Grain Sandwich Rounds

  • 8 oz. Turkey Breast, Thinly Sliced

  • 2 Roasted Red Peppers, Drained and Sliced into Thick Strips

  • 4 oz. Swiss Cheese, Thinly Sliced

  • 4 oz. Red Onion, Thinly Sliced

  • 1 Cup Baby Arugula

Directions

  • Preheat panini press while assembling ingredients.
  • Spread hummus on sandwich rounds.
  • Build the sandwiches in this order: smoked turkey, roasted peppers, arugula, cheese, onion, using equal amounts of each item on each sandwich.
  • Arrange sandwiches evenly spaced on the bottom grill plate of the preheated press. Apply light pressure to handle for about 15 seconds. Grill panini for 3 to 4 minutes. Cut in half on the diagonal and serve warm.
