This is the perfect, quick summer lunch. Easily freeze these and with a quick zap in the microwave, you’re ready to eat!
Sausage-Stuffed Zucchini BoatsCourse: LunchDifficulty: Easy
1 lb hot chicken sausage
1 cup roughly chopped mushrooms
1/2 red onion, diced
1 cup mozzarella cheese
2 tbsp. parmesan cheese
1/3 brick Neufchatel cheese
- Preheat the oven to 350℉
- Split zucchini lengthwise after cutting off the very ends
- Scoop out seeds from center of zucchini, allowing 1-2 inches of flesh on the outside of the “boat.” Set on the grill for 1-2 minutes.
- In a large bowl, combine sausage, onion, parmesan, mozzarella and Neufchatel cheese and mushrooms. Mix thoroughly.
- Stuff each zucchini boat with 1/4 of the sausage stuffing. Bake in the oven for 20 minutes.
