Sausage-Stuffed Zucchini Boats

Sausage-Stuffed Zucchini Boats

Ingredients

  • 2 zucchini

  • 1 lb hot chicken sausage

  • 1 cup roughly chopped mushrooms

  • 1/2 red onion, diced

  • 1 cup mozzarella cheese

  • 2 tbsp. parmesan cheese

  • 1/3 brick Neufchatel cheese

Directions

  • Preheat the oven to 350℉
  • Split zucchini lengthwise after cutting off the very ends
  • Scoop out seeds from center of zucchini, allowing 1-2 inches of flesh on the outside of the “boat.” Set on the grill for 1-2 minutes.
  • In a large bowl, combine sausage, onion, parmesan, mozzarella and Neufchatel cheese and mushrooms. Mix thoroughly.
  • Stuff each zucchini boat with 1/4 of the sausage stuffing. Bake in the oven for 20 minutes.
  • You cannot add "Sweet Acres Creamery - Monterey Jack Cheese" to the cart because the product is out of stock.
