1 tbsp. macadamia nut oil
1 tbsp. fresh basil
1 cup snow peas
1 cup mushrooms
1 red pepper, diced
1/2 lb cooked shrimp
1 cup wild rice, cooked
1 cup chicken stock
1/4 tsp. Cajun seasoning
Directions
- Heat macadamia nut oil in a large skillet over high heat. Once hot, add peas, mushrooms, peppers and shrimp; sauté for 2 minutes.
- Add rice, seasoning and stock, allow the rice to absorb the stock, about 3 minutes and serve!
