Shrimp & Wild Rice Primavera

Ingredients

  • 1 tbsp. macadamia nut oil

  • 1 tbsp. fresh basil

  • 1 cup snow peas

  • 1 cup mushrooms

  • 1 red pepper, diced

  • 1/2 lb cooked shrimp

  • 1 cup wild rice, cooked

  • 1 cup chicken stock

  • 1/4 tsp. Cajun seasoning

Directions

  • Heat macadamia nut oil in a large skillet over high heat. Once hot, add peas, mushrooms, peppers and shrimp; sauté for 2 minutes.
  • Add rice, seasoning and stock, allow the rice to absorb the stock, about 3 minutes and serve!
