Smoke Turkey Gruyere Panini with Apricot Mustard Spread

8 Slices Whole Grain Sandwich Rounds
1-2 Dried Apricots, Sliced
Mustard, to Taste
16 oz. Smoked Turkey, Sliced
4 Slices Red Onion
2 Tablespoon Roasted Red Pepper, Chopped
8 oz. Gruyere Cheese
2 Cups Loosely Packed Arugula
Directions
- Preheat panini press to medium high and spray with nonstick spray.
- Mix apricots and mustard. Spread on one piece of bread.
- On other piece of bread, place turkey, onion slice, roasted red peppers, arugula and cheese.
- Place bread spread with mustard on top of other side of sandwich and put on Panini press.
