This vegetarian entrée is a great way to incorporate summer squash into your diet on a cool summer day!

Ingredients

  • 1 spaghetti squash

  • 2 cups marinara, heated through

  • 2 cups egg substitute (8 eggs, beaten)

  • 1/2 tsp. Cajun seasoning

  • 1/4 tsp. abodo

  • Pepper to taste

Directions

  • Cut squash in half lengthwise; scoop out seeds. Place with cut side down in a baking dish; add water. Cover and bake at 375℉ for 20-30 minutes or until it is easily pierced with a fork. When cool enough to handle, scoop out squash, separating the strands with a fork. into a medium baking dish.
  • Add eggs, cajun seasoning, abodo and pepper. Return to the oven for 15-20 minutes or until lightly browned.
  • Top egg dish with 1/2 cup marinara and serve!
