This light pork stew has a spicy twist, making it perfect for summer!
Spicy Pork & Zucchini Stew with Brown RiceCourse: DinnerDifficulty: Easy
1 tbsp. macadamia nut oil
1 zucchini, seeded and thickly cut
2 carrots, chopped
1 cup wild rice
1 red pepper, diced
1 sweet potato, cubed
1/2 lb pork tenderloin, cubed
1/2 cup parboiled wild rice
1/2 cup jalapeños
1 tsp. coriander
1 tbsp. chili powder
1 tsp. granulated garlic
1 quart vegetable stock
- Heat macadamia nut oil in a large saucepan over medium-high heat. Add zucchini, carrots, red pepper and sweet potato. Sauté for 10 minutes.
- Add remaining ingredients to the pot, stirring well.
- Simmer for 1 hour or until sweet potatoes are tender and serve!
