Spicy Pork & Zucchini Stew with Brown Rice

Ingredients

  • 1 tbsp. macadamia nut oil

  • 1 zucchini, seeded and thickly cut

  • 2 carrots, chopped

  • 1 cup wild rice

  • 1 red pepper, diced

  • 1 sweet potato, cubed

  • 1/2 lb pork tenderloin, cubed

  • 1/2 cup parboiled wild rice

  • 1/2 cup jalapeños

  • 1 tsp. coriander

  • 1 tbsp. chili powder

  • 1 tsp. granulated garlic

  • 1 quart vegetable stock

Directions

  • Heat macadamia nut oil in a large saucepan over medium-high heat. Add zucchini, carrots, red pepper and sweet potato. Sauté for 10 minutes.
  • Add remaining ingredients to the pot, stirring well.
  • Simmer for 1 hour or until sweet potatoes are tender and serve!
