Tilapia assumes the flavor of a powerful Vera Cruz sauce in this light dish!

4 tilapia fillets
2 large zucchini, thinly sliced
1/4 cup capers
1/4 cup green olives
1/4 cup Kalamata olives
3 cloves garlic
2 tomatoes, chopped
1 cup roasted red peppers
- Preheat oven to 350℉
- For Vera Cruz sauce: Place all ingredients except zucchini and tilapia in the food processor until completely blended.
- Dust a baking dish with olive oil spray and add tilapia fillets, top with sauce and cover with sliced zucchini
- Place in the oven for 15-20 minutes or until fish is cooked through.
