Turkey & Swiss Salad with Balsamic Vinaigrette DressingCourse: LunchDifficulty: Easy
3/4 Cup Olive Oil
1 Teaspoon Garlic, Minced
1 Tablespoon Dijon Mustard
2 Tablespoon Balsamic Vinegar
2 Teaspoon Italian Seasoning
1/2 Cup Green Olives, Pitted
3/4 Cup Garbanzo Beans, Drained & Rinsed
1 Head of Lettuce, Chopped
1 Roasted Turkey Breast, Chopped
1 Cup Swiss Cheese, Cubed
Sun Dried Tomatoes, to Taste
1/2 Small Onion, Sliced
4 Cups Fresh Arugula
- For the dressing, combine/whisk olive oil, garlic, Italian seasoning, Dijon mustard and balsamic vinegar in a small bow.
- In a large bowl, combine cubed cheese, garbanzo beans, tomatoes, olives, a few sun dried tomatoes, sliced onions and parmesan cheese.
- Drizzle dressing over the cheese and olive mixture; toss to combine.
- Put fresh arugula on a plate. Top with cheese and olive mixture, and sliced turkey pieces. Serve and enjoy!
