Is the steak right for me?
This steak definitely requires a little more effort to get right. We always recommend the sous vide cooking style for bone-in steaks because it can be easy to over or under cook this monster. The bone locks in juices and flavor making for an awesome presentation. Using your most prized slim blade slicing knife remove the bone. Slice into 1/2-inch strips and serve with salt. This is the best way to enjoy this robustly flavored dry-aged beast.
