Our house line of beef is sourced from Ford Brothers Meats in West Valley, NY, and derived from USDA Hereford cows. Our house line is our way of keeping the most popular cuts of beef in stock when our hyper-locally sourced limited dry-aged signature line is short on supply. Our house line is also a very high-quality but more cost-effective way to get beef on the dinner table.
- Cut from the tail and point end of the beef tenderloin (NOT the center cut Filet)

Is this steak right for me?
This is Mrs. Binks’s favorite steak. This is probably part of the reason why we sell out so quickly – she is always pilfering these steaks from our cooler. Juicy, tender, and almost impossible to get wrong cooking on the grill or in a cast-iron pan. It can be cut into medallions, served as a thick-cut steak, or sliced thin and pan-seared to be served with breakfast. Not as much flavor as a ribeye or strip steak in my humble opinion.
