This Hollow Introductory sample package includes our heritage hog signature sausage, our farm favorite pasture-raised spatchcock chicken, bacon for breakfast, and 1-pound packages of ground beef and hamburgers for quick and easy midweek meals.

1 – Pound Of Our Mild Italian Sausage
Except for breakfast sausage, this is certainly the most widely sold sausage in America. It is not too spicy and lends itself well on the grill or cooked and then added to your favorite tomato sauce. Don’t be caught without a couple of pounds of this in your freezer for a quick and tasty protein that can be added to any Mediterranean-inspired dish.

Need some spice in your life? Let us answer that, of course, you do! This spicy Spanish sausage is our family’s number one favorite. We use it in everything from tacos to Cajun and Creole pasta dishes, it’s as diverse as it is delicious.

I would say that this delightful sausage tastes like Christmas morning but we find ourselves eating it on a random Tuesday in July and many days in between. This sausage is mixed with dried cranberries and fresh orange zest. If your mornings are starting to feel dull or bland, this is exactly what your morning needs.

If you love something with some spice, this is a great sausage to satisfy that craving. It is especially great on the grill served with peppers and onions.

Whether it’s southern cooking, cream sauces or just on the grill with peppers and onions, this spicy summertime favorite works on many levels. The little bit of extra spice and complexities of seasonings adds flavor and southern sophistication to every recipe. Smoked with Applewood sourced from Goodman Farms spent apple trees.

Mozzarella, fresh basil, and sun-dried tomatoes really set this Italian-inspired sausage above the rest. A strong, balanced flavor profile with a punch of sun-dried tomato in the beginning and a light fresh basil finish. Not too spicy and loaded with flavor – it’s going to be hard to decide whether you want to eat this sausage alone on a bun, or added to spice up one of your favorite dishes.
Far be it from me to tell you how to cook anything from The Hollow, but this sausage goes well cooked, sliced, and added to a portion of fresh pasta with garlic, olive oil, butter, and fresh tomato for a light summery midweek meal.

This Apple Maple Breakfast Sausage is one of our signature sausages here at The Hollow. Our goal was to make a sausage that tasted as good as my Nana’s apple pie but was made out of meat. Someone tell Nana to take a break, we’re having sausage for dessert.

Provolone and sun-dried tomatoes really set this Italian-inspired sausage above the rest. Strong, not too spicy but loaded with flavor; it’s going to be hard to decide whether you want to eat this sausage alone on a bun or added to spice up one of your favorite dishes.
1 – Greek Feta And Spinach Sausage
This sausage is the perfect ratio of feta, spinach, roasted garlic, and oregano. These strong flavors would act perfectly standalone or in your favorite red or white sauce. It will add that extra flare you have been missing in your weekly Italian nights, don’t worry we won’t let anyone in on your new secret ingredient.
1 – Fresh Polish Sausage
This traditional fresh polish sausage was a staple in our house growing up. It’s not the smoked kielbasa you traditionally see sold in the supermarket and if you’re not a fan of that taste, you may fall in love with Polish sausage all over again. Our polish sausage has a completely different flavor profile. There is a little bit of marjoram in our recipe but not so much that you will hate us if you’re not a big fan.

Chickens raised at Binksberry Hollow are slaughtered and processed on premises under our 5A Department Of Agriculture slaughterhouse permit in our inspected poultry abattoir. This allows us to raise, slaughter, process and sell up to 20,000 chickens per year anywhere within New York State but we cannot ship or deliver any of our chicken products across state lines. We’re very sorry if this causes any inconvenience. All of our pork and beef products are derived from USDA-inspected meats and can be shipped anywhere in the US.
