Our Sausage Stuffed Cubanelle Pepper with Chorizo and Cheddar is made using our hot Chorizo and mixed with aged Cheddar cheese then stuffed into locally grown Cubanelle Pepper. This is one of my personal favorite appetizers and entrees. Wildly popular and flexible.

Making Sausage Stuffed Cubanelle with Chorizo and Cheddar at home is fun and easy, but when running tight on time this is a perfect addition to taco night or any night you need a quick easy protein. Brown in a cast iron pan then finish in the oven. Serve with your favorite Spanish dish or as a standalone appetizer with salsa.
