Cider is one of our favorite beverages and every year we look forward to the harvest and abundance of apples in Niagara County so we can start pressing fresh batches. Not too sweet, not too tart the perfect blend of New York State apples ideally suited for drinking cold, mulling or even making wassal. This cider also freezes very well and I always make sure to save a bunch for smoking, marinades, and barbecues all year long. The Hollow always focuses on raising animals and our butcher shop operation so this product, as with many of our fruit derivative products is made in partnership with our good friends at Goodman’s Farms.

Is this Cider right for me?
Whether you’re having an ice-cold glass of cider served over chipped ice on a cool fall day while enjoying a bonfire or you are mulling with your favorite spices for a warm aromatic treat on Christmas Day this cider was blended to achieve either result perfectly.
Cooking tip:
No, it is not a typo that says cooking tips. Cider is an ingredient that I used in almost every one of my smoked or barbecue recipes. Instead of adding water to the bottom of your smoker to keep moisture in your meat try using cider. You’re adding more flavor on top of the flavor the wood is already getting into the food. Think of it this way if you’re smoking pork with Applewood why would you not add moisture with apple cider?
Here are some recipes for super fun beverages using cider.
Mulled Cider –
- 1/2 gallon NY Apple Cider
- 1 orange
- 12 whole cloves
- 4 (3-inch) cinnamon sticks
- 15 allspice berries
- 1/4 teaspoon ground nutmeg
- 7 whole cardamom pods
- 2 tablespoons unpacked brown sugar
Add the ingredients together in a non-reactive pot bringing contents up to 190° then reduce to a simmer for 20 minutes. Keep warm and serve with a cinnamon stick.
Wassel –
- 1/2 gallon NY Apple Cider
- 2 cups orange juice
- 2 black tea bags
- 5 cinnamon sticks
- 1/2 teaspoon whole cloves
- 1/2 tablespoon juniper berries
- 3/4 inch fresh ginger piece, cut into slices
- 1 apple, sliced into rounds
- 1 orange, sliced into rounds
Add all ingredients into a slow cooker set on low and cook for 4 hours until the fruit is soft and the mixture is dark. Serve warm with Rum if you’re so inclined.
