I know it can be difficult to choose from the many different products we have available on the website so we picked from our very top sellers. This Hollow Introductory sample package includes our heritage hog signature sausage, our farm favorite pasture-raised spatchcock chicken, bacon for breakfast, and 1-pound packages of ground beef and hamburgers for quick and easy midweek meals.

If you’ve never ordered from the Hollow or visited the farm this is a perfect place to start. A mixture of our best-selling items will load up your freezer with delicious meals that could last for weeks. It never hurts when you can save some money to boot.
2- Spatchcock Chickens (4-5LB Average)
Spatchcocking the chicken is my personal favorite way to prepare a whole bird. This process is achieved by removing the tail and spine clipping the wing ends and laying the whole bird flat. With this technique, you can marinade a chicken and the next day go directly to the grill and slow cook over a fire. This is impossible to do with a whole bird. This technique also works well for oven roasting following the method below but cooks in about half the amount of time.
2- Pounds Of Our Double-Smoked Thick-Cut Bacon
Because this bacon is not loaded with extra salt or water it will hold its shape perfectly if you follow this simple cooking technique: Take a cookie sheet and put a wire mesh rack on top of it. Layout the bacon on top of the wire mesh rack and bake at 400° for about 10 to 15 minutes. The bacon will be perfectly crispy on all sides and hold its shape perfectly.
1- Pound Of Our Mild Italian Sausage
Except for breakfast sausage, this is certainly the most widely sold sausage in America. It is not too spicy and lends itself well on the grill or cooked and then added to your favorite tomato sauce. Don’t be caught without a couple of pounds of this in your freezer for a quick and tasty protein that can be added to any Mediterranean-inspired dish.

Need some spice in your life? Let us answer that, of course, you do! This spicy Spanish sausage is our family’s number one favorite. We use it in everything from tacos to Cajun and Creole pasta dishes, it’s as diverse as it is delicious.

I would say that this delightful sausage tastes like Christmas morning but we find ourselves eating it on a random Tuesday in July and many days in between. This sausage is mixed with dried cranberries and fresh orange zest. If your mornings are starting to feel dull or bland, this is exactly what your morning needs.
4- Pounds Of Our 90/10 Dry-Aged Ground Beef
Whether you’re making meatballs at home or monstrous custom burgers for grilling, this blended high-lean to low-fat ratio ground beef is a perfect go-to. Let’s not forget about your favorite chili recipe, meatloaf night, taco Tuesday, or hamburger helper when you’re in a rush.

Who doesn’t love a nice juicy lean burger with low shrinkage? These are perfect on a bun or plain. You literally cannot go wrong with these burgers.

Making meatballs at home is fun and easy, but when running tight on time this is a perfect addition to spaghetti night or any night you need a quick easy protein added to your favorite pasta. Brown in a cast iron pan then finishes in the oven. Toss the cooked meatballs into your favorite sauce and simmer.

This allows us to raise, slaughter, process and sell up to 20,000 chickens per year anywhere within New York State but we cannot ship or deliver any of our chicken products across state lines.
