This very simple, quick panini is sure to be a hit for the whole family!
Chicken Broccoli Parmigiano PaniniCourse: LunchDifficulty: Easy
4 100% whole wheat sandwich rounds
2 cups shredded rotisserie chicken
2 cups chopped broccoli florets
1 heaping tbsp. parmesan cheese
1/2 cup mozzarella cheese
- in a large bowl, combine shredded chicken, broccoli and cheeses. Mix well.
- Place one large handful on the bottom of each sandwich, press down to seal.
- Place in the panini grill for 3-5 minutes, or lightly dust a sauté pan with olive oil spray and press with a plate, 2 minutes on each side.
