A layer of chicken creates a crispy crust in this strata!

2 cups egg substitute (8 eggs, lightly beaten)
1/4 cup chunky salsa
1/2 large onion, diced
1 red pepper, diced
1/2 cup cooked brown rice
1 chicken breast, cooked & thinly sliced
1/2 cup shredded cheddar cheese
- Coat the bottom of a medium-sized baking dish with olive oil spray. Layer the chicken on the bottom; add peppers and onion, reserving a small amount both for the top. Add brown rice.
- Pour egg into the dish, making sure rice is covered. Add cheese evenly and top off with remaining pepper and onion.
- Bake at 375℉ for 20 minutes or until top is just lightly browned. Top with salsa halfway through baking.
