Ingredients

  • 2 cups egg substitute (8 eggs, lightly beaten)

  • 1/4 cup chunky salsa

  • 1/2 large onion, diced

  • 1 red pepper, diced

  • 1/2 cup cooked brown rice

  • 1 chicken breast, cooked & thinly sliced

  • 1/2 cup shredded cheddar cheese

Directions

  • Coat the bottom of a medium-sized baking dish with olive oil spray. Layer the chicken on the bottom; add peppers and onion, reserving a small amount both for the top. Add brown rice.
  • Pour egg into the dish, making sure rice is covered. Add cheese evenly and top off with remaining pepper and onion.
  • Bake at 375℉ for 20 minutes or until top is just lightly browned. Top with salsa halfway through baking.
