Grecian-Style Chicken Brochettes

2 large handful fresh spinach
3 cloves garlic, minced
1/2 tsp. smoked paprika
4 chicken breasts, cooked
3/4 cup feta
1/2 cup turkey bacon, crumbled
Macadamia nut oil
- Preheat oven to 325℉
- Heat macadamia nut oil in a sauté pan over medium-high heat. Add spinach, garlic and paprika; sauté 2-3 minutes until spinach is wilted.
- In a medium baking dish, coat the bottom with spinach mixture. Slice chicken breasts in half lengthwise and slide them onto skewers.
- Lay chicken brochettes over the spinach and top with feta cheese and turkey bacon. Place in the oven and bake for 10-15 minutes.
- Remove and serve hot!
