1 Cup Cottage Cheese
1 Cup Ham, Diced
1 Cup Cheddar cheese, Grated
1 1/2 Cups Whole Wheat Bread, Cubed
1/4 Cup Jalapeno Peppers, Sliced
1 1/2 Green Onions, Chopped
Salt and Pepper, to Taste
- Preheat oven to 375 degrees F and spray an 8-inch baking pan
with non-stick spray.
- Mix all ingredients in a large bowl. Let it sit for about 15 minutes to allow bread to soak up the egg.
- Pour mixture into the baking pan.
- Bake for about 25-30 minutes, or until the eggs are firmly set and golden brown on top and around edges. (The internal temperature should reach about 165 degrees F). Serve warm.
